Chocolate Coconut Protein Bites
I love protein bites. They are the easiest things. Easy to make, easy to pack, easy to eat. I love that I can customize them to taste any way that I want and the flavors are unlimited! These chocolate coconut protein bites are hands down have to be the best ones I have every had. I got the recipe from my trainer, Kevin Duffy, at North End Fitness. During the summer, I usually eat around three or four of them throughout the day on top of all of my regular meals and snacks. Whether I'm on a 10 minute break in-between skating sessions, driving to a workout, or just want something a little sweet, I always have a container of these on hand in my lunchbox and the fridge. I go through them SO fast, so I always recommend doubling the recipe if you have enough ingredients. These bites are the perfect pick me up and give a boost of energy to get you through long days.
Ingredients:
1 cup of oats
1/2 cup of almond butter (I love to use Nuttzo Power Fuel Smooth!)
1 tbsp of chia seeds
2/3 cup of shredded coconut
1/3 cup of honey
1 serving of chocolate protein powder
Steps:
1. Put all dry ingredients into a bowl and mix.
2. Add in almond butter and honey and combine. (I usually put gloves on and use my hands to make sure everything is really mixed and to keep my hands clean).
3. Roll into bite-sized balls (I use 2 tbsp per ball to make them even).
4. Store in the fridge and enjoy!
*Double the recipe if meal prepping!
