Healthy Carrot Cake Muffins
Ingredients (Yields 8):
1 cup of finely grated carrots
2 cups of oat flour
3 eggs
1/4 cup of coconut oil
1/3 cup of maple syrup
1/2 cup of chopped pecans
1/2 tsp of baking soda
1 tsp of vanilla extract
1 tsp of cinnamon
1/4 tsp of nutmeg
pinch of salt
Steps:
1. Preheat oven to 350° F.
2. Mix all ingredients in a large bowl until well combined.
3. Grease a muffin tin with coconut oil and scoop mixture in evenly (I used an ice cream scoop).
4. Bake for 20 minutes.
5. Let cool and enjoy!
